Salers PDO is an Auvergne cheese that comes in the form of large cylindrical fourmes with a dry rind. The size of the fourmes varies between 14.9 and 18.8 in (38 and 48 cm) in diameter. Each fourme weighs between 66 and 110 lbs (30 and 50 kg). The ordinary Salers PDO cheese has an average weight of 99 lbs (45 kilos) and requires 106 gals (400 L) of milk to be produced. It is among the numerous types of cheese produced at La Grange de la Haute Vallée farm in Albepierre-Bredons in the Cantal department.
