Crack seed delight

In Hawaii, crack seed stores are a national snack. Originating in China, crack seeds are preserved fruits (plums, lemons, cherries) that have been cracked or split with the seed or pit partially exposed to enhance flavor. Their taste is sour, sweet and salty. Once dried, these fruits can be eaten in various forms: powdered, sliced or as whole roots. The intense, tangy aroma of crack seeds makes them extremely versatile in the kitchen: they can be found in throat candies as well as on ice-cream granitas.
