Miles of galleries and cellars illustrate the patience of the winegrowers. Time is the key ingredient to producing wine and champagne. The galleries of chalk and brick extend more than 98 ft (30 m) below the surface in complete silence. The bottles mature for at least three years amid subdued light so as not to disturb the process. Some have waited in the cellars of the Maison Collet domain since the 1940s.
