The different ingredients of 'bougna' - the Kanak stew made of meat, poultry or fish and vegetables grown in the bush - are traditionally sprinkled with coconut milk before cooking. White in color, the coconut milk is prepared from the pulp of dry coconuts. Finely grated, the pulp is then pressed by hand through a fabric which acts as a filter.
